I’m late, I’m late for WIAW!
Until the weather changes, this isn’t going to change… Iced Coffee. Every day is a good day for iced coffee, to go!
Breakfast was 2 slices of Great Harvest Dakota bread, toasted, with peanut butter (homemade), sliced banana and chia sprinkles for crunch!
Lunch has been on repeat this week, as it is super-tasty and simple… wrap sandwich filled with Eden’s refried beans (spiced up with hot sauce and salt – they are awfully blah straight from the can!), topped with crumbled goat cheese, shredded carrots, sliced green onions, baby spinach and sungold tomatoes from my garden. Carrots and honeydew melon on the side.
Crisp. Light. Refreshing.
As always, several of these were consumed throughout the day…
Dinner was homemade quesadillas with leftover pulled pork (local), green onions, spinach, Cholula, and jack cheese. Served with a guacamole salad (shredded lettuce (local), guacamole and Greek yogurt), with salsa on the side. We also had fresh corn on the cob (local – and off the cob, actually), with a little bit of butter.
Tea to end the night!
